NANN's CHEESE STRATA

(Recipe from Ruth Hofmann)

6-8 servings
 
8 slices Italian bread, ¾" thick
Butter
¾ pound Sharp Cheddar, grated
¾ pound Meunster, grated
6 eggs
2½ cups Half & Half
1 shallot, finely minced
¼ tsp. paprika
½ tsp. dry mustard
½ tsp. Beau Monde seasoning
½ tsp. salt
1/8 tsp. pepper
½ tsp. Wocestershire sauce
¼ tsp. cayene pepper

Day before: Let the bread air-dry for 24 hours.

Prior preparation: Cut off crusts and butter bread slices well; then cut into ½" pieces. Butter a 9" x 13" casserole dish. Layer bread on the bottom of the baking dish. Layer cheese on top of the bread. Place the remaining ingredients in a blender and mix until well blended. Pour over the bread. Cover and chill for at least two hours.

Final preparation: Preheat the oven to 300 degrees. Bake 1½ hours or until brown and bubbly. Let it sit at room temperature for 30 minutes before serving.
